This dish is very easy to make and should take you no more than 30 minutes to prepare and cook. You will need to allow for the chicken to be marinated overnight for the best results.
Ingredients for Grilled Chicken Salad
- 6 boneless chicken breasts
Marinade
- ½ cup of extra virgin olive oil
- 1 cup of fresh lemon juice
- 6 cloves of garlic
- ½ teaspoon of cayenne pepper
Salad Dressing
- 4 teaspoons of finely chopped basil
- 2 Teaspoons of Coriander
- 2 teaspoons of Dill
- 1 finely chopped onion
- 1 cup of sour cream
- Salt and Peeper to taste
- 1 cup of mayonnaise
- ½ a cup of rice or cider vinegar
- 1 cup of seedless grapes
- 1 good size apple chopped
- ½ cup of raisins
- ½ cup of celery
Slice along the chicken breasts and open them up. Prepare the marinade ingredients by mixing together in a tray. Please the chicken breasts in the marinade and leave overnight. Remove the chicken breast and throw away the marinade.
Prepare the dressing by adding the olive oil, mayonnaise, lemon juice and vinegar into a bowl and mixing thoroughly. Now add the rest of the dressing ingredient and leave to one side.
Preheat your grill for direct cooking on medium heat and grill the chicken breasts for around 5 minutes on either side until the juices run clear. Place the grilled chicken breasts into a bowl and cover with the dressing ingredients and serve.
