as it can take on the flavours of spices and herbs very well.
You can tweak this wonderful grilled chicken burger recipe to suit your needs as
long as you keep a few basic rules in mind. I have added Thyme mayonnaise to this
recipe to give the burger a lovely edge.

Make sure you grill the chicken properly and always prepare your meat correctly for
the best results. Most of the flavour in a good grilled burger is in the preparation
and herbs and spices. The following recipe should serve 10-12 people, if this is
too much all you need to do is half the contents
Add the chicken burger ingredients into a bowl and set to work mixing all the ingredients
together thoroughly. There is no substitute for your hand for this job and does a
far better job than any machine. Once you have worked all the ingredients together
well, take the mixture and break into 10-12 even pieces. Roll the pieces in your
hand and then flatten into patties.
Prepare your grill for high heat cooking and place the burgers on the grill. Cook
the burgers for around 10 minutes, turning them occasionally to ensure they don’t
burn.
How to make the Thyme mayonnaise. Place the egg yolks, crème fresh, mustard and half
the vinegar into a mixer and set it to whisk. Whisk for around two minutes until
the mixer is creamy. Now start to add the oil one spoonful at a time ensuring your
whisking all the time. Now add the remaining vinegar, salt and pepper and you will
end up with a wonderfully rich, creamy mayonnaise
