


Grilled lobster tails is a dish that most people would never think of attempting due to the cost and delicate nature of the cooking process. This is not really the case with grilled lobster tails and if you following this recipe carefully you will get great grilled lobster tails every time without fail. To prepare the dish of grilled lobster tails you will need to understand a few things about lobsters. Lobsters are available most of the year and are at the best in the summers months. I would suggest you start with a pre-boiled lobster to start with as live lobsters can be a little intimidating for the first time.
When the lobster is cool, remove the claws and legs with a sharp knife and split the lobster in two removing the tails from the head. The hardest part of the recipe is splitting the tails in two. Remember that this must be done length ways and be very careful if you are using a knife. You can also use a good pair of kitchen shears which I would recommend for this job.
Once the lobster tails have been prepared, melt 6 oz of butter in a pan add two cloves of crush garlic and simmer for 10 minutes staring gently to ensure you don't burn the garlic. Garlic has a wonderful taste but can be a little bitter if burnt. Once the butter is ready, turn the lobster tails flesh side up and brush generously with the garlic butter. Set your grill to direct grilling and pre-heat to a medium flame then place the lobster tails on the grill flesh side up.
You want a good flame for this recipe and the grilled lobster tails will cook nicely over a constant flame. The lobster tails should take no more than 4-5 minutes to cook before you can turn them over and cook again for 5 minutes on the shell side. Grilled lobster tails need to be cooked on both sides to ensure you cook all the flesh through properly.
The grilled lobster tails should be white in color when cooked and not too rubbery when pressed for the perfect taste.
Try and buy a female lobster as the flash is more tender and the roe underneath the tail of the lobster can also be used later to make delicious lobster butter.
Grilled lobster tails are wonderful on their own or served with garlic butter or a light dressing. If you do decide to use a live lobster for this grilled lobster tail recipe, firstly tie the large claws together with a rubber band and place in boiling, salty water for 20-30 minutes until the shell is bright red.
Once the lobster is cooking leave it in the water until it is cool.
