Tomato Basil Sauce

This grilled recipe sauce is wonderful with fish and seafood and is very easy to make. The whole process of making this sauce should take no more than 20 minutes.

Tomato Basil Sauce can be prepared up to a week in advance and used to add a wonderful, rich flavor to you grilled tuna or shrimps for example. The tomato basil Sauce can be served hot or cold depending on your taste.

• Add all the ingredients into your food processor or blender and blend for several minutes until you have a smooth paste. Heat a pan on the hop and add the ingredients into the pan. Cook the sauce gently for around 5-10 minutes remembering to stir slowly to stop it burning.

• The tomato, garlic and olive sauce is now ready and can be added to your grilled seafood hot or cold.

• Remember if you intend keeping this sauce make sure you store it in the refrigerator for further use.

• 1/2 lb of olives or around 12-15
• 1 Tablespoon of extra virgin olive oil
• 2 teaspoons of fresh basil
• 1 teaspoon of fresh thyme
• 1 Tablespoon of Good quality balsamic vinegar
• 2-3 large plum tomatoes - remove the skins for a smoother texture.
